Ingredients

  • 1 1/2 cups jasmine rice
  • 1 cup full-fat coconut milk
  • 1 1/2 cups water
  • Zest of 2 limes
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon granulated sugar (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons toasted coconut flakes

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear. Set aside.
  2. In a medium saucepan, whisk together coconut milk, water, rinsed rice, salt, pepper, and optional sugar. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to low and cover tightly. Simmer for 15 minutes without lifting the lid.
  4. Remove from heat and let rest for an additional 5 minutes with the lid on. Fluff rice with a fork and stir in lime zest and juice.
  5. Serve in a bowl, garnished with remaining cilantro and toasted coconut flakes.
