- 1 1/2 cups jasmine rice
- 1 cup full-fat coconut milk
- 1 1/2 cups water
- Zest of 2 limes
- 2 tablespoons freshly squeezed lime juice
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon granulated sugar (optional)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons toasted coconut flakes
Instructions
- Rinse jasmine rice under cold water until the water runs clear. Set aside.
- In a medium saucepan, whisk together coconut milk, water, rinsed rice, salt, pepper, and optional sugar. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to low and cover tightly. Simmer for 15 minutes without lifting the lid.
- Remove from heat and let rest for an additional 5 minutes with the lid on. Fluff rice with a fork and stir in lime zest and juice.
- Serve in a bowl, garnished with remaining cilantro and toasted coconut flakes.
